How CalcMesh converts cooking units
We convert between US customary and metric measures using exact definitions: 1 US cup equals 236.588 millilitres, 1 ounce equals 28.35 grams, and 1 tablespoon equals 3 teaspoons. Weight-to-volume conversions also depend on ingredient density, which we account for where known.
According to the U.S. National Institute of Standards and Technology, these customary-to-metric factors are fixed, so our conversions are exact for volume and mass; the density assumptions we use are documented in our methodology.

US vs Metric Measuring Tips
- Dry vs liquid cups: For liquids, use a glass measuring cup at eye level. For dry ingredients, use nested measuring cups and level with a straight edge.
- Flour measuring: Spoon flour into the cup and level off. Scooping directly from the bag packs the flour and can add up to 20% more.
- Use a scale: For baking, a digital kitchen scale is the most accurate tool, especially when converting between US and metric recipes.
Worked example, European loaf recipe in US cups
Metric card lists 500 g bread flour, 10 g salt, 7 g instant yeast, 320 ml water.
- Flour density ≈ 120–130 g per US cup (spooned+leveled): 500 g ≈ 4 cups − 1–2 tbsp - prefer weighing; scooping can push past 550 g.
- Water: 320 ml ≈ 1⅓ cups (320 ÷ 236.6). Salt 10 g ≈ 1¾ tsp; yeast 7 g ≈ 2¼ tsp instant.
- Baker’s percentages stay honest only if flour is on a scale: hydration here is 320/500 = 64%.
- If converting cups → grams for AP flour, start at 120 g/cup; for bread flour use 127 g/cup and adjust with dough feel.

What to do with the numbers
- Volume↔volume (cups↔ml) is exact; weight↔volume needs an ingredient density, flour is the usual failure point.
- For baking, convert the whole formula to grams once, then scale by baker’s percent instead of re-converting cups every bake.
- Spoon-and-level flour; a scooped cup can be ~20% heavy and will read as a “dry dough” problem that is really measurement.
- Keep a fridge note of your house densities (AP flour, sugar, butter) so US and metric cards stay interchangeable.
