US vs Metric Measuring Tips
- Dry vs liquid cups: For liquids, use a glass measuring cup at eye level. For dry ingredients, use nested measuring cups and level with a straight edge.
- Flour measuring: Spoon flour into the cup and level off. Scooping directly from the bag packs the flour and can add up to 20% more.
- Use a scale: For baking, a digital kitchen scale is the most accurate tool, especially when converting between US and metric recipes.
Cooking Measurement Reality
The U.S. remains one of only three countries (with Myanmar and Liberia) that has not adopted the metric system for cooking, per NIST. American recipes use cups, tablespoons, and fluid ounces while the rest of the world uses grams and milliliters. A 2018 Cook's Illustrated analysis tested 10 home cooks measuring 'one cup of flour' by volume — results ranged from 110 g to 180 g, a 64% spread that fundamentally changes bread and cake outcomes.
The King Arthur Baking Company's flour-weight standard is 120 g per cup of all-purpose flour, versus General Mills' 130 g and Bob's Red Mill's 136 g — reading different brands' recipe cards yields different loaves from the same 'cup.' Professional baking has moved almost entirely to baker's percentages by weight, which is why a 1% scale (0.1 g resolution) is now the most recommended $20-$35 tool for home bakers.
International differences add complexity. A U.S. cup is 236.6 mL, a metric cup (Australia, NZ, Canada) is 250 mL (5.7% larger), and the British Imperial cup (rarely used now) is 284.1 mL (20% larger). A U.S. tablespoon is 14.8 mL, Australian 20 mL (35% larger), and Japanese 15 mL.
